In the kitchen ... Red Berry Blondies

This weekend I tried a recipe from Isa Chandra Moskowitz’s Vegan with a Vengeance. I love this book. It’s full of pictures, a must for me when choosing a new recipe book!

This recipe was for Raspberry Chocolate Chip Blondie Bars…although I cut out the chocolate chips and they were just as good. In fact, so good I wanted to share it!

The ingredients were very simple, I had most of them already in my kitchen, and all were available from Village Greens! The method too was easy peasy, once you’ve converted all of those confusing measurements…ounces? Fahrenheit?

INGREDIENTS

Raspberry Layer

2 cups frozen raspberries (I used mixed berries)

3 tbsp cornflour

¼ cup cold water

1/3 cup sugar

Blondie Layer

6 ounces of soya yoghurt (I used 180g)

¼ cup non-dairy milk

½ cup + 2tbsp rapeseed oil

2 cups sugar

1 tbsp vanilla extract

3 ¾ cups plain flour

1 ¼ tsp bicarbonate of soda

½ tsp salt

1 cup vegan chocolate chips (I cut these out)

METHOD

Preheat oven to 350F (176C) and grease a 9x13 inch baking pan.

Mix all raspberry layer ingredients in a saucepan and bring to the boil. Let simmer for 5 mins whilst stirring for 5 mins then leave to one side with a lid on to keep warm.

In a large mixing bowl mix the yoghurt, milk, oil, sugar and vanilla. Sift in the flour, bicarb and salt and mix till fairly smooth. Set aside a cup of the mixture and pour the remainder into the greased pan. Smooth the raspberry layer on top then dollop on the rest of the blondie mixture that was set aside randomly on top. Then just bake in the oven.

After 35 mins, remove and leave to cool. Only when completely cool, cut into squares. The recipe says 16 but I like big pieces of cake so I did just 12.

In hindsight, I would perhaps have cooked them for a little longer but the tops were starting to get browner than the ones in the picture so I panicked and took them out at exactly 35 mins. They were nice and gooey though. In fact, they were absolutely delicious, I had to quickly deliver them to my nearest and dearest or they may not have had a chance to try them.
