Apple Chutney

Becca here with a quick blog/recipe. Our friend has an amazing allotment and there's often lots of things which need eating all at once. At the moment it's apples. Both eating and cooking so I decided to have a go at chutney with some of the Bramley apples.



Bramley Apples - this was what was left!


Forgetting to look at recipes before shopping meant the cupboard was raided and I just used what we had in the house, loosely based on a couple of recipes.


Ingredients


1kg cooking apples (weight after peeling, coring and chopping)

450g white onion

2tsp cardamom seeds crushed

300ml red wine vinegar

200g light brown soft sugar (the recipe said 350g but prefer less sweet chutneys)

110g raisins

Pepper





Method


Simmer the onions in the red wine vinegar for about 10 minutes. Add the apples, cardamom, sugar and raisins and stir until the sugar is dissolved. Simmer for about 1 hour, stirring frequently.





I re-used jars so washed them first and then sterilised in the oven for about 15 minutes (160 fan) Filled them with hot chutney as soon as they came out of the oven, putting the lids on straight away.





The little bit left in the pan tasted yummy but now it's meant to mature for a few weeks (maybe.......might not be able to wait that long)
