Quick Recipe: Bran Loaf

Hello it's Becca again and this is a very quick baking recipe which I have been making for years (used to have it when we were kids) It's great if you fancy a quick and healthy (ish) loaf cake.





Ingredients


100g bran sticks

300ml milk (I have used water and orange juice in the past and am guessing you could try a plant based milk too)

275g dried fruit (I used sultanas but have used raisins, mixed fruit, dried apricots, anything will do)

100g self raising flour (I used wholemeal)

The original recipe has sugar in it but I found you don't need it as the fruit is sweet enough


Method


Soak the bran sticks and fruit in the milk for 30 minutes. Preheat the oven to 180 degrees. Line a 1lb loaf tin.

Mix in the flour. Add the mixture to the tin and bake for 45mins.





Not the most beautiful of cakes but it tastes good and is relatively healthy. Enjoy!
