Fancy some foraging?

Those that know me well know I love to forage! A few people have been asking me to post about it so here goes with my first blog! I’ve been using nettles, dandelions and wild garlic every day for weeks now, it’s very easy because you can’t mistake them for anything harmful so are good to start with, and you will be seriously improving your nutrition 😍

Dandelion and Wild Garlic Bhajis

These little bhajis are so amazing and full of goodness - definitely one I’ll be making all through the summer 😍

Nettle Shakshuka

Like so many recipes you can always substitute ingredients and in this case I used a big handful of nettles which taste lovely! Just like spinach but free and more nutrients.

Delicious Dandelion Pie 🥧

Well actually it was leek and potato, with cheese and dandelion leaves and flowers and mustard.

I adapted this recipe, substituted stock for milk and used gluten free flour.

Just add in a small handful of dandelion leaves and /or flowers. Don’t add too many as they are slightly bitter -but this is why they are good! Way more nutrients than any greens you can buy in a shop.

Dandelion greens can be eaten cooked or raw (in salads, pesto etc) and an excellent source of vitamins minerals, polyphenols and phytonutrients! High in vitamin A, C and K. They also contain vitamin E, folate and small amounts of other B vitamins. Substantial amounts of minerals, including iron, calcium, magnesium and potassium too.
